Eicosanoid hormones: Anti-inflammatory eicosanoids are produced from omega-3 fatty acids, found in wild salmon, sardines, mackerel and ultra refined fish oil supplements. These omega-3 fatty acids are eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA). Pro-inflammatory eicosanoids are derived from omega-6 fatty acids, found in refined vegetable oils, hydrogenated oils, and grain-fed meats primarily arachadonic acid (AA). The ratio of AA to EPA in blood is an accurate measure of silent inflammation. High levels of insulin exacerbate AA production leading to increased silent inflammation. Excess body fat independently generates increased inflammatory hormones.
